Southern Cooking

One evening several week ago, while my mom was busy teaching one of her Clayground classes, I got a bit hungry and decided to surprise everyone and make dinner.  While looking around for some ideas, I stumbled upon an onion and a few beautiful red, yellow and orange peppers.   The bright colors reminded me of Mexican food so I decided to improvise a vegetable dish.

The result of my experiment was a delicious smoky salsa which went great with spicy Italian sausages.  If you feel like heading south of the border for your next meal, here is my own recipe:
Ingredients:
  1. diced red, yellow, and orange peppers
  2. 1 red onion
  3. 1 tablespoon of vegetable oil
  4. 1/2 can of sweet yellow corn
  5. one spring of fresh rosemary
  6. spicy Italian sausages

Instruction 
  1. Chop up the peppers and onion into small squares  
  2. Pour oil into frying pan and turn the heat to high
  3. Put vegetables into frying pan and stir around for about 5 minutes or until vegetables turn golden brown
  4. Put in a bowl and decorate with rosemary
  5. In the same frying pan brown the sausages until nicely browned
